Blue matcha is a powdered tea originating in Thailand that cannot be fully considered an analogue and competitor to traditional Japanese matcha. The difference is not only in colour. The difference is in the raw materials - the Thai version is made not from leaves, but from the flowers of a vine known as the trifoliate Clitoria. This is the official name, but in Thailand it is more commonly called anchan, Thai orchid, or butterfly peas. The plant forms beautiful, large flowers of bright blue colour with a pleasant aroma unlike anything else.
