Quinoa is the seed of a plant from South America that belongs to the amaranth family. Although we eat it as a cereal, quinoa is a pseudo-grain, gluten-free and incredibly rich in protein and minerals. It helps normalise digestion and has a medium-low glycemic index.

Preparation method: It is important to rinse quinoa well in warm water to remove the saponins - they can impart bitterness. Proportion: 1 part quinoa to 2 parts water. Bring to the boil, reduce heat. Boil for 25 minutes. When the seeds open (white ‘tail’ appears) - quinoa is ready. Drain excess water, if necessary, and let stand for 5 minutes under a lid
