Aquafaba is the liquid in which chickpeas (or other legumes) have been cooked. In powder, it is a concentrated, dried form of this liquid. It is very convenient to store and dose.

How to use:
For whipping:

In sauces and dressings:
Makes texture more delicate, stabilises emulsions (e.g. in vegan mayonnaise).
