Carob is a powder made from the fruit of the carob tree. Its mellow flavour works well in warm drinks, smoothies, porridge, baking and confectionery. Pair it with coconut, vanilla or nut pastes.

How to use: For a drink, first mix the powder with a little warm water or plant-based milk, then add the remaining liquid. When making desserts, allow for carob’s natural sweetness and add sweetener gradually, tasting as you go.

• Warm drinks: prepare with oat or almond drink and add cinnamon or vanilla.
• Smoothies: blend with banana, plant-based milk and a little nut butter.
• Breakfasts: stir into porridge, rice porridge or plain dairy or plant-based yoghurt. Pair with berries and shredded coconut.
• Cookies, muffins and pancakes: sift with flour in recipes designed for carob, adjusting added sugar for its natural sweetness.
• No-bake bites: mix with finely chopped dates and nut butter, shape into balls and roll in shredded coconut.
• Dessert sauce: mix with nut butter, then gradually add warm water to the desired consistency; serve with pancakes or fruit.
