Unmilled rice is whole grain rice from which only the outer inedible shell (husk) has been removed, leaving the bran and germ. This ensures that it retains maximum nutrients.
Properties: Contains anthocyanins, like red, but in even greater quantities - they have anti-inflammatory and anti-cancer properties. High in iron and B vitamins. Improves kidney and liver function. A powerful source of antioxidants.
Preparation: Rinse well (water may be slightly purple). Soak for at least 4 hours, or better - overnight. Cook in a ratio of 1:2.5-3 about 50-60 minutes. After boiling, allow to infuse for 10 minutes.
