Green buckwheat is an unroasted buckwheat kernel, unlike the usual brown (roasted) buckwheat. It retains maximum live enzymes, vitamins and minerals, which makes it especially valuable for healthy eating and raw eating.


Properties:

-High protein content (13-15%) - easy to digest, contains all essential amino acids.

-Gluten-free product - safe for people with gluten intolerance.

-Lots of rutin - an antioxidant that strengthens blood vessels and heart.

-Improves digestion - due to fibre and live enzymes.

-Suitable for sprouting - source of enzymes, vitamins C and B vitamins.

-Low glycemic index - helps control blood sugar levels.


Preparation method:

Option 1: Boiling (like a regular porridge).

Rinse 1 cup of green buckwheat in cold water.

Pour 2 cups of water.

Bring to a boil, then cook over low heat for 10-15 minutes until the water is absorbed.

Remove from heat, cover and let stand for 5-10 minutes.

Tip: do not overcook to avoid destroying the beneficial enzymes.

Option 2: Soaking

Rinse well 1 cup of groats.

Pour cold drinking water and leave for 6-8 hours or overnight.

Drain, rinse and you can eat! The result is a soft, crunchy texture.

Ideal for: smoothie bowls, salads, side dishes without heat treatment.

Option3: Sprouting

Soak for 6-8 hours.

Drain, rinse.

Leave wet in a colander or germination tray, rinsing 2 times a day.

Sprouts will appear in 1-2 days.
